Quick Tuna Crudo

“Crudo” is simply an Italian word for a raw preparation of fresh seafood. This one has an uncomplicated dressing of lemon and olive oil, and a quick finish of fennel pollen and capers. If you can’t find fennel pollen at your local Italian grocer or specialty foods shop, it can be ordered online easily.
Ready in 15 minutes
Serves 2-4 people as a snack
- 1 (14-16 ounce) piece fresh tuna
- Juice from 1 lemon and zest from another
- ¼ cup high-quality olive oil
- sea salt
- 1 generous pinch fennel pollen
- 2 teaspoons capers
- Flaky salt such as maldon for finishing
STEP 1 Set tuna in the freezer for 5-10 minutes before slicing as this will make it easier to cut. While the tuna chills, create a simple dressing by stirring together the lemon juice, olive oil and a pinch of sea salt.
STEP 2 Once chilled, remove the tuna from the freezer and cut into thin strips. Arrange on a plate or shallow bowl. Drizzle with the dressing (you may not need it all) and finish with fennel pollen, lemon zest, capers and a nice sprinkle of flaky salt. Serve immediately.
